VAULT-18284: Audit refactor packages (#21972)

* initial git mv to rename 'audit' packages

* remove 'Audit' prefix from structs inside audit package

* refactor of event/audit pacakges

* EventFormatter => EntryFormatter

* 'AuditFormat' => EntryFormat

* Use NewFormatterConfig func
